Gluten Free Waffles with a WOWW!Factor

Grocery shopping has been special lately. It is rare that my order is even 75% complete with the items I normally purchase and especially tough to get my unique items like oatmeal flour. This lack of access to gluten free flour almost put me in a tizzy. What did I do? I PAUSED and decided to focus on what I did have in my kitchen and not on what I did not have (another secret to stress management OR losing weight while losing weight).
Instead of being challenged by not being able to get oatmeal flour for the last 4 weeks (even though I could have grounded my own), I decided to repurpose a couple sweet potatoes to create a protein packed, gluten free waffle. Imagine the flow of happy hormones from the accomplishment of my final product and the joy of the ease to create this fluffy beauty. I even experienced a warm and fuzzy because the waffle and process of creating it reminded me of good times of being home with family.
I am a gluten-sensitive person and love most things gluten! I refuse, however, to allow this “issue” prevent me from enjoying healthier versions of the foods I love like waffles! Perhaps you are gluten-sensitive as well or would like a healthier, less-processed version of a waffle. If so, this recipe will bless your pants!!!
Single Serving Portion
½ cup of boiled sweet potato
¼ tsp of coconut oil
1 egg
1 scoop of Isopure vanilla protein powder
1/8 -1/4 cup of water
3 dashes of cinnamon
2 dashes of nutmeg
1 drop of vanilla
Heat waffle iron on 4 (or whatever number you typically use).
Combine all ingredients in a small bowl.
Mash and then stir until you get a somewhat smoot liquid texture for the waffle iron. Batter may be a little lumpy; heat from iron will take care of it.
Spray waffle iron with cooking spray.
Pour batter in waffle iron and close lid.
Remove waffle once iron beeps.
Note: All waffle irons are not created equal. Don’t be surprised if it comes out darker or lighter than expected. It may take a little trial and error.
Topping:
½ of small sliced granny apple
1 tsp of butter
½ TBS of pecans
1. Wash, slice and sauté granny apple slices in tsp of butter in skillet.
2. Add a dash of nutmeg, cinnamon and a tiny pinch of salt (to pull out the flavor)
3. Add nuts (although seriously optional )
4. Drizzle caramelized apple/nut topping over waffle.
